Blue Cheese Steak Green Olive Chimichurri Pasta

 

Backstory:

My best friend, Chris, is absolutely mad about blue cheese and green olives.  For his birthday in 2022 he asked me to create him a dish focussing on these flavors.  This is one of the dishes I came up with to satisfy that request.

Ingredients:

  • 1 pound of good quality dry pasta

  • 2 pounds of your favorite steak

  • 8 ounces of blue cheese, roquefort preferred, cubed if not already in crumbles

Chimichurri

  • 3/4 cup olive oil

  • 2 tbsp red wine vinegar

  • 1/4 cup finely chopped parsley

  • 1/2 cup minced green olives

  • 2-4 cloves garlic, minced or pressed, 

  • 2 small red chilies, or 1 red chili, deseeded and finely chopped (about 1 tablespoon finely chopped chili)

  • 3/4 tsp dried oregano

  • 1 tsp coarse salt (add more to taste)

  • fresh cracked black pepper, to taste (about 1/2 teaspoon)

Method:

  1. Make chimichurri

    1. Mix all ingredients together in a bowl. Allow to sit for 5-10 minutes to release all of the flavors into the oil before using. Ideally, if time allows, let it sit for more than 2 hours.

    2. Chimichurri can be prepared ahead and refrigerated for 24 hours, if necessary.

  2. Cook steak

    1. Pull steak from the fridge 30 minutes before cook time.  Salt heavily on all sides and allow to sit at room temp.

    2. Cook steak to medium (if using ribeye) or your preferred steak temp using your preferred method, pan-seared, grilled, broiled, your call.

    3. Allow steak to rest while cooking the pasta.

    4. Slice into bite sized strips once rested.

  3. Cook the pasta

    1. Cook the pasta per package instructions to al dente.

    2. Drain and reserve a cup of the starchy cooking liquid.

    3. Immediate place drained pasta into a non-stick pan over low heat.

    4. Add blue cheese and toss/stir to melt and coat the pasta.

    5. Add reserved cooking liquid as necessary to reach desired consistency.

  4. Serve

    1. Plate 1/4 of the finished pasta.

    2. Lay an 8 ounce portion of steak across the top of the pasta.

    3. Garnish steak with as much or as little of the prepared olive chimichurri as you like.

    4. Enjoy!
